Recipe: Coconut Goji Balls

The an avocado a day team's favorite study snack! 
These coconut goji balls are really easy to make and last quite a while once refrigerated. Try adding different ingredients such as cacao nibs/powder, dried blueberries or any other superfood! 


Ingredients 
1 cup shredded coconut flakes
1/3 cup coconut oil
1 1/2 cups raw cashews
1 1/4 cup hempseed
1 1/2 cup goji berries
2 1/2 Tbsps. raw honey

Method
1. Grind seeds and nuts separately in a coffee grinder or food processor
2. Add the remaining ingredients to a high-speed blender or food processor and blend until turned into a mush.
3. Roll this into balls and then refrigerate.
