Recipe: Banana Oat Bars

These squares are so easy to make and contain very basic ingredients. They are great for people trying the elimination diet or for those who are just looking for a really healthy snack. The way the oats meld with the banana after baking is reminiscent of a nice banana bread, but these contain no wheat, flour or dairy. Please give these delicious bars a try and comment on how it went!






  • 2 cups quick cooking rolled oats (not instant, make sure they do not contain gluten)
  • 1/2 cup shredded coconut
  • 1/2 cup of raisins or chopped dates
  • 1/2 cup chopped walnuts
  • 2 large, ripe bananas, mashed
  • 1/4 cup of unsweetened apple sauce
  • drizzle of honey (if you desire the added sweetness) 

Mix all ingredients together in a large bowl. Once mixed, press into a 9x9 inch pan, and bake at 350 F for 30 min. Let cool then cut into squares or bars.
