Recipe: Beets!

The an avocado a day team has officially completed their last set of final exams before entering clinic! The last three years have flown by, even though we have written 92 exams! We luckily have the next week off to rest and recharge before starting clinic on May 9th.  

One of my favorite foods is beets, especially when paired with spinach, goat cheese and mustard! I know what some of you are likely thinking: "Beets - gross, don't they taste like dirt?" No, not at all - beets are actually very sweet!  Read on to learn about the benefits of beets plus a delicious recipe!

Ever wonder what makes beets red or why you experience beeturia (pink or red colored urine)? Beets contain pigments that give them their rich colors called betalains, which can act as an anti-oxidant and anti-inflammatory. They aid in detox by helping your body's phase II detoxification process. Beets are also high in folate, manganese and fiber. So give beets a chance with this super easy and delicious recipe.



Beet, spinach and goat cheese salad
  • 5 beets cut into quarters 
  • Chopped red onion; as desired
  • 2 handfuls of spinach
  • Goat cheese as desired 
Dressing:
  • 1 tablespoon raw ice-pressed olive oil
  • 2 tablespoons apple cider vinegar 
  • Dried dill as desired
  • 1-2 tablespoons spicy brown mustard

Directions: 
Wash the beets and cut into quarters; do not peel off skin
Steam beets for 15 minutes or until tender 
Let the beets cool and then toss with red onions, spinach and goat cheese. 
Mix dressing in a separate bowl and pour over top of the salad
Enjoy!
