Recipe: Sweet Potato and Apple Mash

As sad as I am to see summer go, I absolutely love the look of fall, especially in Toronto. Whether it be comfy knitted sweaters, the yellow, red and orange autumn leaves or the smell of the last few late summer night campfires. With fall comes the taste of juicy apples, pumpkin spice lattes, cinnamon, nutmeg and sweet potatoes. Anything warm and sweet really hits the spot on those chilly fall nights. I especially love this sweet potato and apple mash as it is dairy free and sugar free unlike most of the other mash recipes out there. 

2 apples (choose a sweeter apple such as Gala or Fuji)
2-3 large sweet potatoes aka yams (I substitute 1 sweet potato for 1 can of pumpkin puree to give it that extra fall kick)
1/2 cup water
1/4 teaspoon pink Himalayan salt  
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp fresh grated ginger or powdered ginger 
*Try and use organic ingredients as much as possible

1. Cut the apples and sweet potatoes into 1/2" chunks
2. Heat the water in a large pot over low heat and add the apples, sweet potatoes (and pumpkin), salt, cinnamon, nutmeg and ginger
3. Cover and stir often for 20 minutes
4. After 20 minutes ensure there is still some water in the bottom of the pot, if not add 1/4 cup more and turn up the heat to medium. 
5. Keep covered and stir often for another 20 minutes (Ensure the ingredients are not burning or sticking to the bottom of the pot if so, just add a bit more water)
6. When they are tender they are done
7. Remove from heat and mash with potato masher or put into a blender and blend till desired consistency 
8. Taste for seasoning and add as desired
